This is my mother-in-law's recipe and is everything a pumpkin bread should be. I especially like that this bread doesn't contain as much sugar as some recipes.
INGREDIENTS
3 c flour
2 tsp baking soda
???? tsp baking powder????
2 tsp cinnamon
1 tsp nutmeg (or cinnamon)
1 1/2 tsp salt
2 c sugar
1 1/4 c oil
4 eggs
14-oz can pumpkin
1 c raisins (optional)
1 c walnuts, chopped (optional)
Preheat oven to 350°. Grease two 9" x 5" loaf pans.
Sift flour, soda, cinnamon, nutmeg, and salt onto wax paper.
Mix sugar, oil, and eggs in large bowl, then mix in the pumpkin.
Mix in the dry ingredients until just blended.
Add the raisins and/or walnuts, if desired.
Divide between the two prepared loaf pans.
Bake for 60 minutes or until tests done.
Cool 5 minutes, then remove from pans. Cool on racks.
