Cool and creamy... This is a good dessert for a warm summer night!
INGREDIENTS
1 c Ocean Spray cranberry juice cocktail
3 oz pkg raspberry Jello
16 oz Ocean Spray cranberry sauce
1 c heavy cream
In a saucepan, heat cranberry juice to boiling over medium heat.
Stir in raspberry Jello until dissolved.
Add cranberry sauce by spoonfuls, and stir until mostly melted in.
Chill until mixture is slightly thickened.
Whip the cream.
Fold the whipped cream into the thickened cranberry mixture.
Spoon into serving dishes.
Chill until firm.
Serves 6 to 8.
