Often served at family birthday parties along with the famous birthday cake, this blueberry cake provides a good counterpoint because it isn't too sweet. Even so, it almost melts in your mouth!
INGREDIENTS
3/4 c Crisco shortening
1/2 c sugar
3 eggs
2 1/4 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 c milk
1 1/2 tsp vanilla
2 c blueberries, floured
Sugar
Preheat oven to 350°F.
Cream the shortening and sugar.
Beat in 3 eggs, one at a time, beating well for 1 to 2 minutes.
Sift dry ingredients, and add to creamed mixture alternately with the milk.
Add the vanilla.
Fold in the blueberries.
Pour into greased and floured 9" x 13" pan.
Sprinkle with sugar before baking.
Bake for 35 - 40 minutes. Test with a toothpick.
Use the large blueberries for this cake, not the smaller wild Maine blueberries.
