This is another great recipe for an old-fashioned cookie from my mother-in-law Shirley.
INGREDIENTS
1 c water
2 c raisins
1 c shortening
2 c sugar
3 eggs, well beaten
3 1/2 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
Boil the water and raisins together for 5 minutes. Cool. Do not drain.
Preheat oven to 400°.
Cream shortening and sugar together and beat until fluffy.
Add the eggs.
Sift or mix the dry ingredients together, then add to the creamed mixture.
Add the raisins and liquid.
Drop by teaspoonfuls on a cookie sheet.
Bake about 10 minutes.
Makes 60 cookies.
