This is my Mom's apple pie recipe. Although she grew up on an apple orchard, I don't know if this was a family recipe or if she got it elsewhere. There are many apple pie recipes, but this is my favorite apple pie in the world.
INGREDIENTS
5-7 tart apples, pared and sliced
2 Tbsp flour
3/4 - 1 c sugar
1/8 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
Lemon
Butter
Pare and slice the apples into a pie plate of the size you'll be using (so you know when you have enough, but not too much). Turn them into a large bowl.
If the apples are a little old, sprinkle with lemon now or at the end.
Stir the dry ingredients together and mix with the apples. (Use the lesser amount of sugar if the apples are old and/or not so tart.)
Turn the apples into pastry-lined pie pan.
Dot with butter. (Can sprinkle with a little lemon now if desired.)
Cover with the top crust, and seal by fluting the edge or with a fork.
Pierce the top crust with a fork or a paring knife.
Bake in a preheated 450° oven for 10 minutes, then lower heat to 350° and bake for 30 more minutes.
I like cortlands for pie, but Aunt Astrid used opalescents, an heirloom variety from the orchard.
