This tomato sauce recipe is from the Passeretti's. These quantities make a lot... almost too much for my crock pot! Delicious.
1 large onion
Olive oil
4 28-oz cans whole peeled tomatoes
4 cans (6-oz) tomato paste
Oregano
2 bay leaves
12 - 16 sweet Italian sausage
Optional:
Fresh mushrooms
Green pepper
Chicken
Chop the onion, and brown it slightly in olive oil over medium heat in a large pot.
Add the tomatoes, and crush.
Add the tomato paste.
Season generously with oregano and bay leaves.
Fry the sausage, and when done, drain the fat and slice into rounds.
Add to the sauce.
Boil the sauce quickly but continue stirring so sauce doesn't burn onto the pan.
Turn down to low and let simmer 5 - 6 hours or longer, stirring occasionally.
You may also add mushrooms, chopped green pepper, or chopped chicken.
I use a crock pot, but that's not necessary.
