Another fine pie recipe from Mom Whiting and part of every year's Thanksgiving dinner.
INGREDIENTS
1/4 c melted butter
1 c sugar
3 Tbsp flour
3 slightly-beaten egg yolks
Juice and grated peel of one lemon
1 1/2 c milk
3 stiffly-beaten egg whites
1/2 recipe pie pastry
Blend the butter with the sugar and flour.
Add slightly beaten egg yolks, lemon juice and peel, and milk.
Fold in beaten egg whites.
Pour into 9" pastry-lined pie pan.
Bake in hot oven (450o) for 8 minutes, then in moderate oven (325o) for 25 minutes.
(Confession: I've never had the nerve to make lemon sponge... I make the lemon meringue and leave it to one of my talented sisters-in-law to make this one. One of these days...)
