This easy and tasty recipe from Dorinda makes 2 quiche.
INGREDIENTS
4 cartons Eggbeaters
2 c 1%-2% milk
1/8 tsp nutmeg
8 - 10 oz mushrooms, sliced
salt
pepper
thyme
1 tsp margarine
2 8-oz pkgs grated Swiss cheese
8 oz grated sharp cheddar, divided
2 pie plates
pie crust, optional
Preheat oven to 350°.
Beat in a large bowl: Eggbeaters, milk, and nutmeg.
Saute the mushrooms in the margarine, adding the salt, pepper, and thyme.
Sprinkle one package of Swiss cheese into each pie plate.
Sprinkle half the grated Cheddar into each pie plate.
Divide the mushrooms between the pie plates.
Divide the egg and milk mixture between the pie plates.
Bake for about 30 minutes, or until done.
Not so low cal if you like your quiche in a pie crust shell...
