This is a Christmas tradition at our house... recipe courtesy of Aunt Astrid. An integral part of any tray of Christmas cookies!
INGREDIENTS
1 c (2 sticks) butter, softened
1/2 c confectioners sugar
2 1/4 c sifted flour
1/4 tsp salt
1 tsp vanilla
3/4 c finely chopped walnuts

DOUBLE RECIPE
2 c (4 sticks) butter, softened
1 c confectioners sugar
4 1/2 c sifted flour
1/4 tsp salt
2 tsp vanilla
1 1/2 c finely chopped walnuts

Preheat oven to 400o.
Mix butter, sugar, flour, salt, and vanilla together. Mix I often use a food processor, but by hand is fine and so is a electric mixer as long as you don't incorporate too much air.
Form into 1" balls (5 dozen or so per recipe)
Bake for 14 - 17 minutes.
Roll in confectioners sugar while hot and again when cool.
The mini-muffin papers are good for these... easier to handle.
Suggestion: double the recipe... If you don't, you'll wish you did!
