This is easy if you have lots of fresh coriander and left over rice. Off course it will not be my recipe if it does not include vegetables. For protein, I have my go to ingredient - boiled egg. You could try canned beans for the protein.
This is not necessarily fried rice. It is basically mixing coriander chutney with rice. It should work with your own coriander chutney.
