This is a recent recipe that I call "Grilled Eggplant Parmesan Sandwich"
Two servings
This is a little more effort because the eggplant is twice grilled to get the breaded effect. You can just use the eggplant without trying to bread it. It is tasty that way too.
You use oil spray - where you get no calorie from oil in the recipe
Parameters for your recipe: Different Sandwich Every Time
Vegetables : eggplant (here) , mushroom, bell pepper (all colors), zucchini - (your favorite as long as it can be stacked)
Protein : egg (here), tofu, imitation sliced meats ( or regular meats if you are not a vegetarian)
Cheese : sliced cheese (pepperjack here) ,feta, vegan cheese (if you are a vegan)
Herbs : basil (here), oregano, parsley, dried italian, different types of curry powder
Sauce : sliced tomatoes (here), salsa, sriracha, mayo, salad dressings
Pickle : sliced jalapenos (here) - you can use something you like
Oil : Canola (here), There are other flavored sprays you can use (olive, butter)
Bread (sliced) : Rosemary olive oil (here, Wegmans), white, wheat, you preference (without very strong flavor)
Spread butter, or butter flavored spread, or margarine, or spray oil on both sides of the slice. Definitely the ones that are going to contact with the grill
Clockwise from top:
pickled jalapenos, basil (home grown), breading mixture (corn starch, bread crumbs, grated parmesan cheese , salt, fresh ground pepper, chilli powder), boiled eggs, tomato, graffiti eggplant
Heat grill. When hot spray some oil on both surfaces.
Trim and slice the eggplant lengthwise and place on grill, sprinkle salt and fresh ground pepper.
close and cook (8 minutes)
I cut the eggplant thin. The top surface may not be in contact. So I flip them over and grill for two minutes for grill marks. Above is the flipped slices. Spray oil and cook for two minutes. Remove and let it cool
Spray some oil on the grill and close
Stir the breading mix well
Spread the breading mix on a plate and press the grilled eggplants on both sides and then lay it on the grill.
Spray some oil and close and cook for three minutes
On buttered bread
Add cheese slices
Add fresh basil leaves
Add pickled jalapenos
Add tomatoes
Add sliced eggs and sprinkle pepper
Add grilled breaded eggplant
Close with other slice
Place in hot grill. Spray some oil
Cook till you like the color
Serve with side salad
