This is like Upma (a south Indian breakfast dish) made of fine Semolina (rava). Here is it made with coarse wheat rava. It does have a lot of vegetables.
Servings : 2 (lots left over)
Base : Coarse wheat rava (1 cup)
Dry Ingredients: 2 Tbsp rice flour, 2 tbsp bread crumbs, 1 tsp baking powder
Spices: ground black pepper, chilli powder, salt
Vegetables : your choice - cooked/sauteed till they loose their water
Wet ingredients: 1 cup buttermilk, 2 cup water, one egg
Sauce : Fresh Wegmans hot salsa
Cheese : Wegmans Mexican shredded cheese
Herb: dried oregano
Apology: No image of mixed batter
Lesson: Probably too much vegetables.
Cannellini beans from a can - well washed
Course wheat semolina roasted on medium heat
From top right: tomatoes, eggplant (graphitti), beans (julienned) - has been partially cooked by steaming in the microwave, green chillies (thai), onions
Heat pan, when hot add oil, add cumin seeds
add green chillies and toss
Add eggplant toss, add salt and ground black pepper, toss, close and cook on medium heat. Toss often
When almost done add beans, salt, pepper and toss and cook closed
After 4 minutes add onions and cook
Add tomatoes and cook
Add beans, chilli powder and toss and cook
Add wet ingredients and let it come to boil
Add dry ingredients and stir often
Should be done soon. I served it with fresh salsa (Wegmans). It probably needs a better sauce
