This is my version of Sriracha sauce. Nothing added - except through the store bought stuff
Have you read the list of ingredients in any of the bottled chilli sauce varieties - including the original Sriracha sauce?
There are a lot ( not sure why? )- probably for shelf life and appearance
This sauce has a low shelf life and must be stored in the refrigerator. However it is easy to make. You can make what you need everyime. You will find like adding stuff and making it your own - like fresh ginger, fresh garlic, fresh onions - express your creativity!!

Notes: (reflections after the fact)
Will use sea salt instead of soy sauce. Givers a brighter color
Can add fresh garlic to the grind to make a garlic chilli sauce
Heat small saucepan
Add two tablespoon of oil (canola)
Add dry chillies (Andhra -Indian) when hot
When you get the fried flavor add water and bring to boil
Shut of the heat
Let it rest and absorb
Transfer to bowl (not actually necessary - makes a good picture)
Transfer bowl of chillies to a grinder. Add apple cider vinegar (sweet + sour) and soy sauce (salt)
