This is a veggie bean burrito. I believe grated cheese and sour cream phenomenally increase the taste of the burrito. For vegans you could substitute equivalent ingredients. I do not know what's available as I do not make vegan dishes. I shop at the flagship Wegmans store in Rochester, NY. Their brand products are good especially if you are going to mess with them. The packed products here are all Wegmans.
There are 8 tortillas in the package. I make all and freeze the rest for another time.
Tortilla : Plain flour - Gordita style - large to tuck in ends. You can use smaller ones and leave the ends open. There are so many options
Cheese : Four cheese Mexican . You have many other options including grating the cheese you adore.
Beans : Black beans cooked (from can). I will wash them about 5 times in warm water so all the sediments are removed. I have no idea why five times. I have been doing this over decades and feel the recipe will be a disaster if there is less or more times. One of my foibles. You can use other beans if you prefer.
Veggies : All fresh - your choice
Seasoning : Fresh Serrano, onions, and ginger. Chilli and cumin powder. Fresh ground pepper and salt. Pickled Jalapeno pepper slices.
Sauce : Fresh salsa, sour cream
Herb : Fresh oregano (from my garden). You can use Cilantro, Basil and anything you prefer.
Tortilla, black beans, fresh salsa, shredded cheese, Serrano, Oregano, onions, ginger, cabbage, green beans, carrots, green tomatoes (skinned). The vegetables are julienned.
Hot pan; add oil (4 table spoons) and swirl around; add serrano and toss (5 sec), add onions and toss, add ginger and toss. I will spray some water to control the chilli vapors. It can get overwhelming
Cook with closed lid. Distribute your salt and fresh ground pepper with each addition to the pan. Start with the green beans and cook for a minute or two and spray some water. Then add the carrot and cabbage. Then the green tomatoes (substitute for tomatillo)
Take some of the black beans and use the tines of the fork to mash them as much as possible. This is well help thicken and blend the sauce later.
Add salsa and cook. Reserve some of the salsa for the burrito for when you eat it. Add chilli powder and cumin powder and cook. Dilute the sauce with hot water (you can use the microwave). Just add enough so that beans get soaked well
Add the back beans and toss. Cook it down so that it has a consistency you like. Not too runny and not too solid
Add the herb and stir/toss it well into the mixture.
This is what I have. We are ready to serve
I microwave the tortilla in the microwave on a plate lined with paper towel for 10 seconds. Rub some butter on it. Add the bean mixture to the bottom end.
Add generous amount of cheese. Some pickled Jalapenos.
Hold the bottom end and roll it over the beans till covered. Wrap the sides over and complete the roll. It may be a little tricky. I use a spoon to keep the beans inside.
The rolled burrito
I will microwave it for 30 seconds to partially melt the cheese. Slobber some sour cream length wise. Add the fresh salsa everywhere.
