The dish (my title) expressed in Hindi is more royal sounding : Shahi Bhindi Do Piazza
A simple dish of sauteed okra with onions. In this page it is has a fennel flavor
Made here as a side to accompany rice and dhal. Can be eaten with roti
Two servings
The word Royal is used imply exotic spices. In this dish it is cinnamon sticks, bay leaves and cardamon.
You are free to experiment with your set of spices. For example you can use pumpkin spice for Halloween Okra. If you do try let me know how it works out
Vegetables : Okra (desi - Indian), onions
Herb : fennel sprigs (I bought fennel for the first time and I was able to find some sprigs of fennel leaves attached)
Spices: Cinnamon stick (one), dried bay leaves (two), cardamon (some seeds), fennel seeds (tspoon), red chillies (whole, dried). Salt and fresh ground pepper always.
Fresh : Onions, fennel sprigs (salvaged from fennel), okra (desi okra - Indian store - have not seen it in Wegmans)
Dry: Cinnamon stick, fennel seeds, cardamom seeds, dry red chillies (from Andhra), bay leaves
Heat pan; add oil (canola) when hot; add cinnamon and bay leaves - move it around, add fennel and cardamom, add red chillies
(should take about 10 seconds)
Add okra - toss - add salt and fresh ground pepper, toss and cook covered
toss often
covered cooking will steam cook the inside of the okra - and gets rid of the stickiness
When almost done add onions
continue tossing and cook with lid closed
When done add the chopped fennel sprigs
after discarding the bay leaves, cinnamon, and chillies
