An open face sandwich with the Iyengar combination of vegetables and fortified with egg and cheese.
Iyengars are a community of Tamil-speaking Hindu Brahmins who can be found in the Indian state of Karnataka. During my time there I was fond of their bakery. I ate their open faced sandwich almost everyday as the bakery was below my apartment. Here I am referring to their veggie combination. Off course I added some more items to it. The sandwich here is grilled not baked.
Veggies: cabbage, carrots, potatoes, onions (thin cut) and peas
Herb: fresh coriander
Seasoning: jeera
Cheese : grated Mexican cheese (Wegmans)
Bread : your choice. Wegmans organic sourdough slices is shown here
Protein : boiled egg (see my new slicer - made in Australia). Probably my first device from Australia
Sauce: chilli garlic sauce (home made - see recipe some where else)
Unlike previous recipes the vegetables are stir fried in a pan and then grilled.
Remarks: Makes over 6 servings (six slices for the vegetables)

Heat sauce pan, add oil when hot. Season with jeera (cumin seeds) after oil is hot.
Add potatoes and peas. Add salt and pepper and toss and cook on medium heat closed. Toss often (5 minutes)
Add carrots, salt and pepper and toss and cooked closed. (3 minutes)
Add cabbage and do the routine (5 minutes)
When done, switch of heat and spread on plate to cool
Add fresh cut coriander
Add cheese and and mix well
Cut boiled egg

Spread butter flavored spread on both sides of slice. Spread the hot sauce
Lay the eggs
Top with a generous layer of Iyengar mixture (almost an inch). Place in heated grill and spray oil - plain or butter flavored. Close and cook for about than 5 minutes
It is done and ready to eat. The thickness reduces a lot. The cheese makes a nice crust
