(It can also be scrambled egg with vegetables if the omelette breaks up)
Vegetables: Cabbage, carrots, beans, broccoli, peas, onions
Protein: Egg (one/two per sandwich)
Bread : Wegmans farm style slices (Any other one should be OK - including left overs)
Dairy : Wegmans Monterey jack cheese slice
Butter: Spread - ' I cannot believe it is not butter '
Spices: Cut Thai chillies, (ginger and/or garlic optional), salt, fresh ground black pepper
Sauce: House coriander chutney/sauce
Servings: 6 and above - divide by number of omelettes
Omelette : I assume that you can make an omelette. If you do not know how
Break one egg in a bowl
Beat with little salt and pepper
Add cooled cooked vegetables and mix well
Heat pan, Add oil to hot pan, pour egg/vegetable mixture
Cook both sides carefully turn over (if it breaks - you can make scrambled egg sandwich)
You can soft cook them so that they can finish cooking in the grill
Two egg sandwich is two stacked omelettes
The veggies: Cabbage; carrots; beans - julienned; broccoli - florets thinned; fresh peas; Thai chillies (sliced); onions
Cook on medium heat with lid closed
Add salt and pepper with new addition to the pan
Heat pan, add oil and when hot add the chillies and move it around for a couple of seconds and then add onions and cook for a few seconds till soft
Start with beans, after some times add carrots, peas, then add broccoli, then onions
You can sprinkle some water a couple of times to produce steam for cooking
Divide in portions for the number of eggs you will use
Coriander chutney/sauce
Thai chillies, back pepper, coriander, apricots (reconstituted), grape tomatoes, salt, juice of a quarter lime
Grind/blend to spreadable consistency
Spread butter spread on both sides
spread coriander chutney/sauce on both sides - liberally
Add slice of pepper cheese to one or both sides
Add omelette
cover and place in a hot grill
remember to spray both sides before and after placing the sandwich in grill
This is the grilled sandwich
Informally serve as made
If you are fastidious you can trim the excess and sign with the chutney on top
