This is version 1 - first time
Much information was gleamed from the Internet. Many recipes exist but this is mine as it is loaded with vegetables
Servings : 6 (1 cup - rice cooker measure - 2/3 regular cup)
Base : Semolina or rave (fine) - 1 cup
Dry Ingredients: 2 Tbsp rice flour, 2 tbsp bread crumbs, 1 tsp baking powder
Spices: ground black pepper, chilli powder, salt
Vegetables : your choice - cooked/sauteed till they loose their water
Wet ingredients: 1 cup buttermilk, 1.5 cup water, one egg
Sauce : Fresh Wegmans hot salsa
Cheese : Wegmans Mexican shredded cheese
Herb: dried oregano

Lesson: Probably too much vegetables. Cook one at a time for better heat distribution
bell pepper, onions, carrots, two thai chillies, fresh peas sliced fine lengthwise
Medium heat : Heat pan, add oil and heat, start with thai chillies, move it around, add bell pepper, peas and carrots, salt and fresh ground pepper
Swirl it around and sprinkle some water and close and cook, and toss (10 minutes - peek to see if almost done)
Add onions and herbs and cook for some more time . Let it cool
Add dry ingredients and toss well
Beat one egg, add buttermilk and beat, add water and beat (wet ingredients)
Transfer vegetables to a container
Add dry ingredients and toss well. Add wet ingredients and make a batter and mix well (Sorry no picture of mixed batter). It is thick and not runny
Sauce is Wegmans hot salsa mixed with Wegmans shredded Mexican cheese (microwaved). Microwave in 10 sec interval till cheese melts into sauce
Spray some oil, and drop a dollop (almost a cup). let it cook about three/four minutes on medium-low heat. Should see some bubbles. Spray some oil and turn over
Cook the other side. When almost done press gently
Serve with sauce and enjoy
