It is really a pasta dish. The pesto is sauce for the veggies.
I also use pine nuts sometimes
I use other herbs like coriander, oregano, and mint. It can also be a combination.
I plan to make pesto with groundnuts to use it with lo mein one of these days. Will include it if it tastes good.
Makes two servings
The protein here is eggs. It tastes better with garbanzo beans instead
You can make it with any shape of pasta you prefer
Distribute your salt and fresh ground pepper for each ingredients you add to the pan
Cooked covered on medium heat
Basil, olive oil, split raw cashews, cayenne peppers, and garlic
Grind fine (or coarse)
Onions, pesto, grated parmesan cheese, boiled eggs, veggies (broccoli, zucchini, mushrooms)
Heat pan, add olive oil, add sliced cayenne to hot pan, stir for 10 seconds, add zucchini. Close and cook for a couple of minutes
Add mushrooms and onion and cook for a couple of minutes
Add button mushrooms. Toss and stir till cooked and mushrooms become moist
Meanwhile your pasta (angel hair) must be nearly finished. You should have boiling water ready
Add pesto and toss it in the vegetables. Reduce heat
Rub pesto on the sliced boiled eggs

Served with buttered pasta sprinkled liberally with grated Parmesan cheese
