Two servings
One egg per serving
The dish is dry as everything is grilled. Served with salsa
Afterthought: The salsa was sheer laziness. It was not a great choice.
A cream sauce is required. I would probably beat up the salsa with yogurt or sour cream next time. Maybe some sriracha to the vegetable mix for a little more heat
The baguette sandwich is a winner
American baguette, pickled Jalapeno, salsa (hot), feta cheese, sliced pepper cheese (Wegmans)
Beans, onions, carrots, zucchini (julienned)
Vegetables grilled separately as some take longer
Grilled carrots
Sprinkle salt and fresh ground pepper with the vegetables
zucchini and onions grilled together
around 5 minutes should be fine
Add crumbled Feta cheese and mix well. You can add extra heat if you like - pickled jalapeno welcome
Served with grilled baguette sandwich sliced thin with pepper cheese in between both sides of bread with a little butter spread
you can add pickled jalapeno in between
First time for me - really tasty. Can be a great appetizer by itself
Raise the front of the grill to make it horizontal as the eggs will want to run down the incline
Beat one egg with salt and pepper
Arrange the vegetables with a hole in the center
pour the egg into the centers and grilled closed
Served with salsa
