A simple fried rice using artichokes (frozen) and fresh rosemary. Accompanied with egg raita
Two servings.

Rosemary (long stalk cut in four pieces), Serrano chillies (rice), thai chillies (raita)
Artichokes - frozen (warmed in microwave), left over sauted vegetables (warmed), apple cider vinegar, sriracha, olive oil. Sea salt and fresh ground pepper (in every recipe even if not in picture)
Left over take out rice (Indian) warmed in microwave.
I do not like to add cold ingredients to a hot pan
Heat pan on medium, add oil when hot add the cut serrano chillies and toss it around for about 10 seconds. Removes sting and flavors oil.
Add rosemary and toss for several seconds
Add artichoke and toss with salt and pepper, toss and heat with lid on. Toss several times
Add the veggies and toss. Remember you will need some salt and pepper for the rice.
Add the vinegar and sriracha and toss
Add the rice and toss to mix. Close and cook and toss several imes.
Its done. Set heat to Lo.
Mix yogurt and butter milk well and add a little salt and pepper.
Season (thadka). In a small pan add oil. When hot add mustard. When splutters add jeera. Add the thi chillies and move it around for several seconds
Toss into the yougurt buttermilk mixture and stir well.
arrange sliced boiled egg around the edges of the bowl and add the raita in the middle
Served with simple salad of totamoes and cucumber (not shown)
