Chicken has a tendency to dry out, especially when introduced to a smoky draft of hot air. In order to keep the chicken from drying out I always like to brine them overnight, introduces a lot of flavor and moisture that you'll welcome at the table
Mix it all up and put the bird in. These ingredients all mix easily so I don't use hot water, just warm water, that way I can drop the bird in and not worry about cooking it in the solution.
