Crock Pot Scalloped Potatoes

Scalloped potatoes are always a treat, and this is as close to a "set it and forget it" recipe as I've ever seen.

INGREDIENTS

  • 6 cups raw potatoes, cubed, sliced or shredded
  • 1 medium onion, cubed, sliced or minced
  • 1 tsp salt
  • 4 tbsp butter
  • 4 tbsp flour
  • 1 tbsp salt
  • 2 cups milk
  • 1½ cups shredded cheddar cheese

DIRECTIONS

  1. Layer potatoes and onion into crock pot.
  2. Make a roux with butter, flour, and salt.
  3. Slowly add milk, then cheese. Cook over low heat until thickened.
  4. Pour over potatoes in crock pot, and gently stir.
  5. Cover and cook on "Low" 6 to 7 hours or "High" 3 to 4 hours.
