Crock Pot Scalloped Potatoes
Scalloped potatoes are always a treat, and this is as close to a "set it and forget it" recipe as I've ever seen.
INGREDIENTS
- 6 cups raw potatoes, cubed, sliced or shredded
- 1 medium onion, cubed, sliced or minced
- 1 tsp salt
- 4 tbsp butter
- 4 tbsp flour
- 1 tbsp salt
- 2 cups milk
- 1½ cups shredded cheddar cheese
DIRECTIONS
- Layer potatoes and onion into crock pot.
- Make a roux with butter, flour, and salt.
- Slowly add milk, then cheese. Cook over low heat until thickened.
- Pour over potatoes in crock pot, and gently stir.
- Cover and cook on "Low" 6 to 7 hours or "High" 3 to 4 hours.
