These cookies are just amazing, light and sweet, but with a nice flavor too.
Ingredients
⅔ cup vegetable oil
¾ cup sugar
¼ cup honey
1 egg
1 tsp vanilla extract
2 cups flour
2 tsp baking soda
½ tsp salt
raw/turbinado sugar for rolling
Instructions
preheat oven to 350f
In a stand mixer or whatever you normally use, beat the oil, honey and sugar together until smooth. Add the egg and vanilla and mix until combined.
Mix in the flour, baking soda and salt.
If your dough is really soft, refrigerate for 15-30 minutes until it's a bit like playdough texture.
Roll the dough into balls about the size of a cherry tomato or ping pong ball, depending on how large you like your cookies.
Roll the balls in the raw sugar to coat, making sure to coat the whole thing.
Bake for 7-9 minutes until the edges are light brown.
