Pizza
Pizza is just great, and making your own from scratch is the best way to hit that greatness right on the head. The dough and sauce you're about to be introduced to may not change your life, but it may cause you to reevaluate your previous pizza based decisions.
Dough
This recipe is a standard thin crust style dough, my preferred choice. If you want a deep dish you can find the recipe here
Ingredients
Dry
3 cups flour
2 tsp sugar
½ tbsp kosher salt
1 tbsp dried Oregano
1 tbsp dried Basil
1 tbsp fast rising yeast
Wet
1⅛ cup warm water
1½ tbsp olive oil
Instructions
Mix water, 1 tsp sugar, and yeast in a bowl, set aside to proof, maybe 10 minutes.
Mix remaining dry ingredients together in a bowl.
Add wet ingredients to dry mixture (proofed yeast and oil). It's ok for the dough to be a little sticky, but add small amounts of flour or water to keep it firm.
Knead: This is important, either use a machine or do it by hand, either way make sure the dough gets a good thorough kneading, I do ti by hand for 3-5 minutes. When done form dough into ball.
Coat the inside of a bowl with olive oil and place the dough ball inside; give the dough a spin in the bowl to coat it with oil
cover the bowl with a towel and set aside for 30-45 minutes, until dough is roughly doubled in size.
Sauce
This recipe will actually make enough sauce for a couple batches of pizza.
Ingredients
1 can whole tomatoes (15 ounce/443-500 ml)
1 tbsp olive oil
½ tsp red pepper flakes
1 tsp kosher salt
1 tsp minced garlic paste
Instructions
Remove the tomatoes from the can and discard liquid, you only want the tomatoes
Using your hands crush the tomatoes as thoroughly as possible (careful, this is messy). When done you should have a chunky puree.
Add in remaining ingredients and mix thoroughly
Place in fridge for a few hours.
The sauce can be used immediately, but giving it a bit of time will allow the flavors to mature, you'll be happier with the outcome.
Pizza
I'm leaving this purposely vague, I know what I want in a pizza (I usually make a pepperoni and a Hawaiian), but you make the pizza you want.
Once everything is ready roll the dough out into your greased pans
spread tomato sauce over dough, making sure to cover, but don't drench
Spread shredded cheese over sauce
put toppings over cheese (meat, vegetables, etc)
Put pizza into preheated oven at 450 degrees for 10-12 minutes, you'll know when its done
When pizza is done drizzle a little olive oil over top and sprinkle Parmesan cheese
