Bird carcass (turkey, chicken), most meat removed, bones broken where they can be
2-3 stalks celery
1 carrot, cleaned and cut in half
1 medium onion, quartered
4 cloves garlic, crushed
half a bunch of fresh parsley
4-5 sprigs fresh thyme
1-2 bay leaves
½ tbsp. peppercorns
1 tbsp. kosher salt
8-10 cups water
Place all ingredients in a slow cooker and add water.
Stir to combine
set slow cooker to low and cook for 18-24 hours
