Wet Jerk Rub

I'm sure there are other things you can do with this rub but so far all I've used it for is in the Jerk Chicken Recipe above.

  • 1 bunch green onions, white & light green parts cut into 1-inch pieces

  • 5 cloves garlic, peeled

  • 1 inch piece fresh ginger, peeled and cut into slices

  • 2 habanero peppers, stems removed and roughly chopped

  • ½ yellow onion, chopped

  • ¼ cup brown sugar

  • 2 tsp ground allspice

  • 2 tsp ground ginger

  • 2 tsp dried thyme

  • 1 tsp ground cinnamon

  • 1 tbsp Kosher salt

  • Juice of 1 lime

  • Juice of 1 lemon

  • 1 tablespoon Worcestershire

  • ¼ cup neutral oil

Put everything in a blender or food processor and mix until smooth and creamy. I find this makes enough for two recipes of jerk chicken
