This is another micro-state with a huge collector fanbase. Why? I'm not exactly sure TBH, but I have heard that it is always (& I mean always) "tough-tough" to get these banknotes even when you visit Macau! Perhaps its because there's only so many notes which happen to be very popular (& often snapped up by dealers the moment they get released). I have heard collectors relay how they've stood in line ups at banks trying to get some UNC Patacas. Good luck! So yes, perhaps that is one of the reason these banknotes keep going up in price as there's limited supply.
