Pasta... ummm... YES!
Have you tried desperately to recreate noodles that are AIP compliant?!
I seriously read every. single. label! I was so sad when I had to just walk away from that pasta isle. Until, I found Miracle Noodles! There are kelp noodles, I tried those first. They're crunchy and smell like... Kelp. But when cooked correctly, Miracle Noodles are so wonderful! They actually have the consistency and basic texture of real noodles!! Bring on the fettuccine!
What are miracle noodles?
Shirataki Noodles made from the Konjac Root. The Konjac plants grown in Japan, China and South Asia.
What makes these noodles miraculous?
Basically they are a great substitute for pasta because they have a similar texture and taste, they absorb the taste of whatever sauce/seasoning they're cooked in. They are low in calories, have no carbs, and thus work well for people seeking weightloss. They are also known to reduce blood sugar spikes and therefore may help those with diabetes.
How to use them?
You will want to rinse them under running water for a minute or two and then cook them in a non-stick pan for a couple of minutes to help them dry out just a bit. This will also get rid of the smell from the root as the water they're packed in holds the original smell in a little too much.
Then you can simply use them as you would any noodles. I generally season them and put a bit of olive oil, then top them with sauteed vegetables and meats, etc.
These are very delicious and a truly great substitute for pasta!

One thing to note, glucomannan can be used as a digestion aid/laxative, thus if consumed in large quantities, these can cause you to use the restroom more often. This should not be a problem when eating the normal amount of noodles, but if this particular fiber is consumed in capsules etc. it will be more of a laxative.
