Okay so I really wanted shrimp and thus I made both of these shrimp recipes. I honestly ate this shrimp scampi over miracle noodles with coconut shrimp on the side. So yummy!

The shrimp scampi is front and center on a bed of miracle noodles!
Tools:
- Frying Pan (I prefer this one!)
- Spatula or Tongs
Ingredients:
- Shrimp
- Olive Oil
- Salt
- Pepper (Reintro)
- Garlic (several cloves)
- Onion
- Any other spices that you prefer
Instructions:
- Heat some (~2 tsp) oil in the pan
- Chop and sautee' the onion and garlic for a minute or two, but not until they are completely cooked
- Add shrimp and more oil until the shrimp have enough around them to start frying them. I used enough oil to cover about the bottom 1/4-1/3 of the shrimp
- Once the shrimp are about half way cooked, flip them. Then continue flipping them every minute or so until they are cooked through.
- Pick the shrimp out of the oil and place on top of miracle noodles, salad or a delicious roasted veggie plate!
