Tacos!

Ok! so I make these all the time! The shells I use are a reintro, I use the Siete brand cassava tortillas sold at Whole Foods and according to my Ibotta coupon app, they may be sold at Walmart soon which would be awesome because at Whole Foods... they are $7.99 per package of 8 and that is just expensive! If you cannot have the tortillas, you can choose to make your own that are compliant, or you can also just omit those and make this yummy recipe into a salad instead! Good Luck and Happy Cooking!

• Spatula
• Cast Iron Skillet
• Knife
• Cutting Board
• Spoon

Ingredients:

• AIP Chicken Fajita Seasoning (found at this site because I use this recipe, make a bunch in a mason jar and keep it for when I want easy taco-ish flavoring) https://meatified.com/aip-taco-seasoning/
• Beef
• Lettuce
• Avocado
• Onion
• Mushrooms
• Tortillas
• Olive Oil

Instructions:

1. Chop onion about 1/2 of a large organic white onion and saute it with olive oil until about 1/2 cooked
2. Add beef to the pan, add AIP Fajita Seasoning, and cook until about 3/4 cooked to well done
3. Chop and add the mushrooms to the pan
4. Heat the tortillas for about 20 seconds in the microwave to make them pliable
5. Layer Lettuce and beef, then slice and layer avocado into the taco shells
6. Enjoy! This is definitely a favorite around here and week keep some meat or bacon cooked pretty much all the time in the fridge for things like this as well.
