Personally I loved the restaurant Chicken Salad Chick before starting my AIP journey. Unfortunately, none of their food seems to be AIP compliant. I wanted to make a delicious Chicken Salad I could enjoy as a quick lunch while still maintaining my health and therefore I bring you, AIP Chicken Salad!

One note, the tigernuts are optional, and I have to say they are very crunchy if you don't soak them first, my husband does not like them and I leave them out of his portions, while I eat them carefully in mine.
You can add just about any other chicken salad ingredients, grapes might be delicious, apples, cilantro, etc. you can really have fun with this recipe, but what I've given you here is a great base to start with :)
