Instructions:
- Heat olive oil in pan on stove, use enough olive oil that the plantain slices are not totally covered, but definitely have enough around them to cook semi deep fried (this is also when I like to add some bacon grease ice cubes into the mix to add flavor, if bacon is compliant or reintroduced for you without reaction)
- Slice plantain into about 1/4-1/2 inch wide slices slightly angled around 45 degree slices are nice
- Add the plantains into the oil and fry them a few minutes each side until they are slightly browned but not burnt on each side
- Scoop a nice helping of your ice cream into a large bowl, and add the fried plantains on top!
- Dust with cinnamon and Enjoy!
