Today is National Blueberry Pie day or something along those lines. That inspired me to change up my normal sweet potato bake and make a gluten free AIP compliant sweet potato version of yummy pie! I hope you enjoy it as much as I did and try adding some ice cream (if you are able to reintroduce some) to make this al a mode!

These will likely look a bit brown / burnt on top, but that is the carob powder and flour, and they should taste yummy, they aren't burnt! You can add some vanilla ice cream (I use nada moo brand, but this is a reintro because it has sugar and guar gum), to make it a la mode.
