INGREDIENTS:
6 boneless chicken thighs
salt & pepper
1/8 - 1/4 cup extra virgin olive oil. less is better
juice of 2 lime
½ large onion, sliced
4-6 tablespoon sriracha depending on punishment level
1/2 red bell pepper. Some minced, some diced, some sliced
INSTRUCTIONS:
- Combine olive oil, lime juice, sriracha, onion slices and chicken thighs. Marinate overnight. Or don't.
- Preheat oven to 400 degrees.
- Start cooking a cup of rice
- Toss chicken in pan just big enough to hold meat with a few gaps between for sauce. Don't want them sauce to dry up. Season with salt & pepper.
- Bake for 15 minutes covered, 15 minutes uncovered, then broil for another 5 minutes until the tops brown and start to crisp.
- Serve over rice
Honey Lime Sriracha Chicken

1/4 cup soy sauce
2 Tbsp Worcestershire sauce
3 cloves minced garlic
6 Tbsp fresh lime juice
1/4 cup Sriracha sauce
1/4 tsp salt
1/4 tsp pepper
