Ingredients
1 lb ground beef
1 oz package taco seasoning
14.5 oz can diced tomatoes, drained and divided
12 oz frozen southwest veggies (corn, beans, peppers, whatever)
15 oz jar salsa con queso
10 oz can enchilada sauce
5 10 inch flour tortillas
8 oz mex blend cheese
Go:
- preheat oven to 400. grease a 10 inch square baking tray
- cook and drain beef, stir in taco seasoning and tomotoes. set aside
- heat up veggies, stir in 1/2 cup salsa con queso. set aside
- build: 1/2 cup ench sauce on bottom; tortilla; 1/4 cup chease; 1 1/2 cup meat; tortilla1/4 cup cheese; 1 cup veggies; repeat
- top: tortilla; ench sauce; tomato; 1 cup cheese;
- foil and bake 30 mins
