chili - beef and bean
3 tablespoons bacon grease or canola oil (or oil plus bacon crumbs)
2 tablespoons unsalted butter(optional)
2 red bell peppers, diced
2 TB diced jalapeño
1-3 diced/minced Anaheim peppers. or chili peppers. or poblano (roasted gutted peeled)
2 yellow onions, diced
1 head garlic, minced (1/4 c)
1-2 pound boneless chuck, or pork roast trimmed
2-3 pounds ground beef, coarse grind
1-2 pound Jimmy Dean Hot sausage
3 tablespoons chili powder
2 teaspoons cayenne pepper
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons hot paprika( I used smoked)
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 cups tomato sauce
1 12 oz. can tomato paste
12 ounces lager beer
2 cups chicken stock plus water
Two 15.5-ounce cans garbanzo beans, without juice
Two 15.5-ounce cans black beans, without juice
1-3 TB brown sugar
directions
- Chop onions, peppers and garlic.
- Sauté first 6 ingredients for 5 minutes.
- Add tomato paste, tomato sauce and chicken Stock.
- add spices and simmer.
- Meanwhile, fry up sausage and hamburg. Drain well and add to pot.
- Trim all the fat off the chuck roast or pork roast and place in pot.
- Cook on low for 6 hours stirring occasionally.
- Remove roast from pot and cut and shred.
- Place back into pot along with beans and beer.
- Add water throughout as needed as consistency thickens.
- Cook another 6 hours or to your satisfaction.
- Add brown sugar taste test after 1 TB
Serve with choice of sour cream, cheddar cheese and a squeeze of fresh lime juice.
