Ingredients
3 Chicken Breasts or 4-5 cutlets (don't do less)
3/4 cup chicken broth
1/3 jar capers
2 lemon. 1/2 sliced thin and rest juiced
2 T butter
1/4 cup white wine. pinot grigio
Angel hair pasta
flour
salt pepper
1 1/2 tsp minced garlic
Directions
Cut chicken into 2-3 pieces.
pound thin
generous salt and pepper on both sides, coat with flour
fry in peanut oil at 350 prob medium high. 3-5 minutes per side depending on thickness
set aside on paper towels
drain excess oil
saute wine and minced garlic until garlic browns and wine reduces till almost gone
add chicken broth, juice from 1 1/2 juiced lemons, capers
once this starts to boil, add chicken in and cook 1ish mins per side
remove chicken and set on serving tray
add butter and 1/2 thin slices lemons in pan
boil to thicken a few seconds if needed
pour sauce over chicken
serve with angel hair
