pepperjack lemon pasta
ingredients
1 box fettuccine
4 chicken breasts
olive oil
2 blocks (8oz) pepperjack cheese
2 lemons
1 red pepper
1 orange/yellow pepper
lemon pepper, salt, pepper
prep
- preheat oven 350
- dice chicken. cut peppers into large slices
- saute chicken and peppers in olive oil on stovetop.
- while cooking chicken, squeeze in some lemon juice, and cook with some lemon rinds (remove when done obviously)
- add seasoning to taste while cooking (lemon pepper, garlic powder, onion powder, red/black pepper, whatever you want)
- while chicken is cooking, shred both blocks of pepperjack cheese
- while chicken is cooking, cook fettuccine al dente
bake
- once chicken and everything else is done, put everything into glass baking tray:
- greased pan, make about 3 layers of ingredients in this order: noodles, chicken and peppers, cheese, squeeze lemon juice.
- should make about three layers
- piled high, cover and bake for 30-40ish mins
- serve with lemon slices
