Toffee Macadamia White Chocolate Cookies

Toffee Macadamia White Chocolate Cookies (adapted from Completely Delicious)

1/2 cup plus 2 Tb salted butter

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

2 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 cup white chocolate chips

1/2-1 cup chopped macadamia nuts (I like lots of macadamia nuts, so I use a full cup)

1/2 cup toffee bits

Preheat oven to 375 degrees and grease/line a sheet pan with parchment paper. Heat the butter in a small saucepan until golden and the solid bits are lightly browned. It should smell nice and toasty. Set aside in a small bowl until solid (you can stick it in the fridge to speed things up!)

Beat the butter, brown sugar, and sugar until fluffy. Add the eggs and vanilla one at a time, mixing well after each.

In a separate bowl, whisk together the flour, baking soda, and salt. Add to the butter/sugar mixture and mix until just combined. Add the white chocolate chips, macadamia nuts, and toffee bits and mix until incorporated.

Bake for 10-12 until lightly browned. Let cool for 5 minutes on the pan before removing to a wire rack to cool completely. Store cookies in an airtight container at room temperature.
