Cilantro Lime Rice

Cilantro Lime Rice (adapted from Cheerios and Lattes)

1 Tb olive oil

1/4 cup chopped fresh cilantro

1 cup white rice (we like basmati best)

2 cups water

1/2 teaspoon salt

2 limes

In a heavy saucepan, heat 1 Tb oil medium-low heat. Add rice and juice from 1 lime, stir for 1 minute. Add water and bring to a boil. Cover, turn down to simmer over low heat until rice is tender and the water is absorbed; about 20-25 minutes.

In a small dish combine the juice from the other lime, salt, 1 Tb olive oil, and the chopped cilantro. Stir together and let sit while the rice cooks. (You can also just add the lime juice to the water if cooking in a rice cooker)

When the rice is done, fluff it with a fork, drizzle with cilantro mixture, and toss to combine well. Serve warm!
