Cinnamon Puff Cookies

Cinnamon Puff Cookies (adapted from The English Kitchen)

1 box of puff pastry (2 sheets), thawed (till workable, not till warm!)

softened butter

1/2 cup packed light brown sugar

2 tsp ground cinnamon

1/2 tsp nutmeg

1 egg yolk beaten with a little bit of water (1/2-1 tsp)

To glaze:

1 cup powdered sugar

few drops vanilla

1-2 Tb milk or cream

Preheat the oven to 400 degrees. Line a cookie sheet with parchment paper. (If you just grease it, your cookie sheet will be a mess!!)

Unroll your puff pastry. Brush with softened butter. Mix together the cinnamon, nutmeg, and brown sugar. Sprinkle this evenly over top, leaving about 1/2 inch bare on one long edge. Roll up from the not-bare edge, pressing all together tightly. Using a sharp knife cut into 12 slices. Carefully slide them onto the prepared baking tray. Flatten each one slightly with your hand by pressing down gently. Brush each with some of the beaten egg. Repeat for 2nd sheet of pastry. Bake for 10 to 15 minutes until puffed and golden brown. Remove from the oven and immediately transfer to cooling rack. Let cool completely before drizzling.

Whisk together the powdered sugar, vanilla and milk. You want a thick drizzly glaze. Drizzle over top of the puffs. Enjoy!
