Paper Bag Apple Pie

Crust:

1 1/2 cups flour

3/4 tsp salt

1/2 cup oil

1 Tb sugar

2 Tb cold milk

Filling:

7-8 cups cored, peeled, and sliced apples

1/2 cup brown sugar

1/4 cup granulated sugar

pinch of salt

3 Tb flour

1 tsp cinnamon

1/2 tsp ginger

1/4 tsp nutmeg

1 tsp vanilla

Topping:

1/2 cup flour

1/4 cup sugar

1/4 cup packed brown sugar

pinch of salt

1/4 tsp cinnamon

Preheat oven for 350 degrees and butter/grease a pie dish. Stir crust ingredients together with a fork in a medium bowl and press into bottom and sides of the pie dish. Yep, that's all! No rolling! Trust me.

Stir together filling ingredients and pour into crust. Stir sugar, flour, salt, and cinnamon together in a smaller bowl and cut the cold butter in. Rub together with fingers until the mixture starts to come together like cookie dough and all dry and floury bits are incorporated. Crumble with fingers over the top of the filling.

Lay a large paper bag on it's side. Place the pie inside the bag, fold the open end over 2-3 times and seal with staples or masking tape. Place pie (in bag) on a cookie sheet and bake for 90-100 minutes. Remove from the oven and let cool (inside bag). Place under broiler 5-10 minutes to brown the top a bit if necessary.
