Dough
2 cups all purpose flour, (plus more if needed)
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon salt
3 tablespoons unsalted butter
⅔ cup whole milk
Filling
¼ cup white sugar
¼ cup light brown sugar
2 teaspoons ground cinnamon
Cream Cheese Frosting
1 cup sugar
4 ounces of cream cheese (softened)
¼ cup unsalted butter (softened)
½ teaspoon vanilla extract
Instructions
Step 1. Gather all ingredients. Preheat the oven to 200 degrees celsius and brush an 8-inch square baking dish with 1 tablespoon of the melted butter.
Step 2. Make the dough. Whisk flour, white sugar, baking powder and salt together in a large bowl. Add three tablespoons of softened butter into the flour mixture using your hands until butter is lentil-sized.
Step 3. Pour the milk into the flour-butter mixture and stir with a spatula until a soft dough gets formed.
Step 4. Roll dough out on a floured surface and therefore roll the dough into a 10- x 10- inch square. Brush the surface of the dough with the remaining 2 tablespoons of melted butter.
Step 5. Make the filling. To make the filling, whisk ¼ cup white sugar, brown sugar and cinnamon together in a small bowl. Sprinkle 1 tablespoon of cinnamon-sugar mixture in the bottom of the prepared baking dish. Sprinkle the remaining mixture over the butter-brushed dough.
Step 6. Roll dough around filling to form a log. Cut the log into 9 rolls about 1 inch wide and therefore place the rolls in the prepared baking dish.
Step 7. Bake in the preheated oven until the rolls are puffed and lightly golden for 20 to 25 minutes.
Step 8. Make the frosting. So, to make the frosting, mix sugar, cream cheese and ¼ cup of softened butter and vanilla extract together in a bowl until smooth.
Step 9. Top the cinnamon rolls with the frosting.

1,5 dl grated coconut
Cream Cheese Frosting
100g butter (room temperature)
200g cream cheese
4dl icing sugar (sieved)
Instructions
Step 1. Set the oven to 175 degrees. Cover the bottom of a springform pan with baking paper.
Step 2. Whisk eggs and caster sugar white and porous. Add the oil and whisk together.
Step 3. Mix the wheat flour, bicarbonate, baking powder, ground cinnamon, ground ginger and salt in a separate bowl.
Step 4. Mix the dry ingredients into the egg mixture. Finish by adding the grated carrots and grated coconut.
Step 5. Pour the batter into the form and bake the cake for about 45-50 minutes until a toothpick comes out clean. Let the cake cool completely before spreading on the frosting.
Step 6. Whisk the butter for the frosting until really creamy, add the cream cheese and whisk together thoroughly, approx. 3-5 min. Sift over the icing sugar and whisk together to form a creamy frosting. If you want to flavor the frosting, you can add grated lemon peel or a little vanilla.
Step 7. Spread the frosting over the carrot cake and decorate with e.g. pecans or walnuts, or serve just as it is.
