Ingredients
1 lb. spinach
1/4 c. sesame seeds
1/2 teaspoon sugar
1 T. soy sauce
splash of rice vinegar
Directions
Put spinach in boiling water for 1-2 minutes. Strain and rinse with cold water. Squeeze out excess water. Grind sesame seeds and mix with sugar, soy sauce and rice vinegar. Mix sauce with spinach. Shape spinach into rolls about the size of sushi rolls. Drizzle soy sauce over top and serve.
Serves 2 (as appetizer or side dish)
