Ingredients
4oz (4 slices) bacon, cut into 1/2" strips
2 cups sliced mushrooms
3T sherry vinegar
2T vegetable oil
salt and pepper
2T chopped flat-leaf parsley
Instructions
(can be made one day ahead; rewarm before serving).
Cook bacon with 3T water in skillet over medium heat.
When bacon starts to crisp, add mushrooms and cook 5-6 minutes until tender, stirring occasionally.
Add sherry vinegar and 1/4 c water; simmer until reduced by half, about 1 minute.
Stir in oil; season with salt and pepper and stir in parsley.
