Dragon's Tail

Ingredients

• • 2 oz rum (Kennedy school uses 3 Racks rum, which is aged in whiskey barrels)

  • Ginger liqueur (1/2 oz)

  • Ginger syrup (1/2 oz) - see below for recipe

  • 3/4 oz lemon juice

  • Angostura bitters

Directions

• • Combine all ingredients in a shaker half-full of ice. Shake and strain into a chilled cocktail glass. Note: these are the ingredients from the menu, so we don't have the proportions down just yet.

  • To make ginger syrup: boil 1c water, 1c sugar, and 3/4c peeled ginger, and simmer uncovered for 30 minutes.
