INGREDIENTS:
1 tablespoon olive oil
1 pound sweet Italian sausage, casing removed
1 cup chopped onion
3/4 cup chopped red bell pepper
2 large cloves garlic, chopped
1/2 teaspoons black pepper
1 teaspoon Italian seasoning
8 cups lightly packed chopped kale
1 cup corn
1 (14.5 ounce) can chicken broth
1 pound gnocchi
1/3 cup heavy cream
salt (to taste)
INSTRUCTIONS:
Add oil to a 4-quart soup pot over medium to medium high meat. Add sausage. Brown, breaking up into small chunks, about 5-7 minutes. Add onion, red pepper, garlic, black pepper, and Italian seasoning. Cook for 3 minutes, stirring frequently.
Add in kale, corn, and chicken broth. Bring to a boil. Reduce heat. Cover and simmer for 8 minutes.
Bring heat back to medium. Add gnocchi. Cook covered, stirring once or twice for 3 minutes or until gnocchi is tender. Turn off heat. Stir in cream. Add salt if needed, to taste.
