Popovers with Garlic Herb Cheese

Popovers with Garlic Herb Cheese:

1/2 pkg. (about 2 1/2 oz.) Fine Garlic Herbs Cheese from Boursin

1 cup warm milk

2 eggs, room temperature

1 cup flour

1 rounded tsp. salt

3 tbsp. butter, melted and divided

Preheat oven to 450 degrees F. with the baking rack positioned on the lower half of the oven.

Beat cheese and 1/4 cup milk until smooth. Add the remaining milk. Beat until cheese is completely incorporated. Add eggs and beat until foamy.

Combine flour and salt. Add to milk mixture. Beat until flour is incorporated. Add 2 tablespoon s butter. Beat to incorporated.

Brush the remaining butter into wells of 6-capacity popover. Place in oven to heat for 2 minutes. Do not leave too long as butter will burn. Remove from oven.

Immediately fill wells 2/3 to 3/4 full with batter (for a more dramatic pop over effect, fill up to 3/4 full). Bake at 450 F for 20 minutes (do not open door during baking). Reduce heat to 350 F and bake for 12 to 15 minutes. Done when toothpick comes out with few crumbs attached.

Immediately pierce a slit into the popover using a small knife to release steam. Unmold. Best served immediately. Makes 6 popovers.

Note: If using muffin pans, will yield about 9. Reduce baking time about 5 or so minutes.
