Honey Beer Glazed Wings

Honey Beer Glazed Wings:

3 lbs. chicken drumettes

1/2 rounded tsp. salt

1/2 rounded tsp. black pepper

1 cup honey beer (I use Honey Brown)

1/3 cup honey

1/3 cup chopped onions

1 rounded tbsp. cornstarch

2 tbsp. + 1 tsp. soy sauce 

1/8 tsp. black pepper

1 tsp. olive oil

1/8 cup chopped salted peanuts  

1 tbsp. chopped parsley  

Preheat oven to 400 degrees F. 

Pat drumettes dry with paper towels. Season with 1/2 rounded teaspoons of salt and pepper.  Grease one large or two small baking pans. Place drumettes, skin side down on pans. Allow space between each piece. Overcrowding may produce too much liquid during baking. Bake on lower half of oven for 30 minutes. Drain any excess liquid. Move baking sheet(s) to top half of oven. Bake for 20 additional minutes.

Whisk cornstarch and beer in a small mixing bowl. Some foaming will occur. Set aside. Place a small saucepan on medium heat. Add oil and onion. Cook for 1 minute. Increase heat to medium high. Cook, stirring constantly until liquid boils and thickens slightly. Add soy sauce, honey, and 1/8 black pepper. Stir until sauce is thick and smooth, another minute or so. If needed, adjust seasoning to taste; add soy sauce for more saltiness, honey for more sweetness.  

Place drumettes into a large mixing bowl. Pour glaze onto wings and mix. Garnish with peanuts and parsley. Plate and serve.

Note: Although I haven’t done it, if you would like less pronounced taste of beer, I would suggest replacing some of it with chicken broth.
